Before you drive
Questions from the dock
Season, ice, and the pot. Straight answers in the voice of a family that sells what the boats bring in.
What’s in season right now?
On this demo board it is mid-October on the South Carolina coast. White shrimp are the fall run and the main thing on ice. Eastern oyster season is open from October into spring — we sell them in the shell, by the dozen, when the grounds are open. Black drum are thick in the creeks. Flounder are still worth keeping. Blue crabs slow down as the water cools; when we have whole ones, they go on the board.
How long will it keep on ice?
Demo kitchen guidance, not a health-department rule. We pack shrimp and fish on clean ice. Keep the cooler in the shade, lid shut, and drain the melt when you get to the beach house. Plan to cook shrimp and fish within two days. Live crabs want to be cooked the day you take them. Oysters in the shell stay colder nested in ice — eat them within a couple of days, and follow any local closure if a storm shuts the grounds.
How do I cook the shrimp?
For a boil, potatoes go in first, then sausage and corn, and the shrimp last — two or three minutes, until they turn pink and curl. Pull them before they get chalky. Heads-on shrimp from the kit can go straight in the pot. Headless 16/20 are big enough for the grill: oil, salt, a hot grate, a couple of minutes a side. The full kit steps are on the boil kit page.
How do I cook the fish, oysters, and crabs?
Whole flounder: score the top, salt it, and pan it in butter or lay it on a grill. Whole black drum: stew the bigger fish with onion, tomato, and a little smoked meat, or fry the plate-size ones. Oysters: roast them on a sheet until the shells gape, or eat them raw only if you already trust that kind of risk. Blue crabs: steam them with a splash of vinegar and the same seasoning as the boil, until the shells are bright orange. Demo notes — use your own judgment at the beach house.
Do you deliver to the beach house?
No. Pickup at the dock only. We ice the cooler so it survives the drive to Awendaw, McClellanville, or a beach house on the Cape Romain coast. We do not run a delivery route.
Can I pre-order?
Yes — name, phone, pickup day, and what you want. This website only shows a success message. It does not send the order anywhere and it does not take payment. On a real dock we would call you if the boat came in light.
What if the boat is late?
Then the board is late. Wind on the creek, a short tow, or a Monday when we are closed — we would rather tell you than sell you a story. Call before you leave the beach house if you are driving for one specific thing.
Do you take cards?
Cash and cards at the counter. No tabs. No invoices. Pay when you pick up. The prices on this site are demo prices, not a quote from a working dock.
